
Hello everyone! Today we have a supervisor, Pippa. When Pippa was a kitten she loved to supervise everything. She would follow me around and watch me scoop the cat boxes (she still does). My dad would come over to help with projects and she would follow him around. She’s always got to be involved in everything. She is definitely a momma’s girl and loves to be near me. She is an excellent little supervisor!
So, for today’s dish we need some rice (your choice-the recipe called for red rice but I opted for a mixture), broccoli, bell peppers, a red onion, some little tomatoes, and some cannellini beans.

Start by cooking the rice. That will take some time.

Chop your veggies. Cook the broccoli in the steamer to soften it up a bit.

Drain and rinse the beans.

The rice will be the base for this dish.

Top with the broccoli.

Start adding your chopped veggies.


Add the beans.

I used honey dijon mustard dressing for the topping for this dish. That worked deliciously! But you can go with whatever floats your boat. Also, the next day when I ate more of this I made it like a salad and used some greens in it. There’s a lot you can do with this dish!! I hope you enjoy it!
