Happy Monday Y’all! This pasta salad was absolutely delicious!! We’ve had some crazy record-breaking temperatures here in the Midwest, so I wanted to make something cool to eat. This was perfect! I went with my friend to Eastern Market in Detroit and got a lot of the ingredients, so I know they are fresh and locally grown. Speaking of ingredients, we obviously need some orzo for this dish. In addition to that, we need some green onions, shredded carrots, radicchio, radishes, bell peppers, and broccoli. For the dressing we need hummus, chives, maple syrup, and lemon juice.

Chopped veggies

Start by cooking the orzo. Once it’s done rinse it in cold water and set it aside. Chop up your veggies.

Broccoli

I had some little tomatoes on hand and decided to add those to this dish as well.

Add the orzo into the bowl with your chopped veggies.

Dressing

To make the dressing mix the hummus, chives, lemon juice, and maple syrup in a bullet blender until smooth.

Very colorful!

Mix it all up. You can add the dressing to the salad all at once or top each bowl as you serve it.

This is a great dish to serve at a bbq cookout. Serve cold. Enjoy!
