I was super excited to give this one a go. We had a local restaurant in town – in the last city I lived in – that made a phenomenal dish. Ever since we moved out, I’ve been clamoring to make my own paprikash. Relatively simple dish, you can make this on the cheap (as it was old world intended). Paprika chicken is a total win, so read on to see what I did, why I did it, and I hope you give it a try.
The Prep Table

Of course, I have a giant mason jar of paprika, but I wanted some “hot hungarian paprika” to add at least a little authenticity when I can. How authentic is McCormick’s – I’ll let the Hungarians judge me hard, but I did with what I had available. Not too often is our preparation photo as simple as this, but I was excited for it.

We’re continuing our potato dumpling series with these guys. If you recall, MotherForensicBBQ bought these for the Easter meal instead of pierogi, and I happily took ’em to showcase something different. Let’s get to cookin.
The Process

We got that flour/paprika chicken browned on each side to start. That signature red dish is one hundred percent that paprika so don’t be shy. It’s paprikash, expect to use paprika. Brown it up on each side then remove.

Once removed, add the onions and let them saute in the chicken juice and the leftover paprika. I mentioned old-world for a reason. We’re not wasting anything – flavor, seasoning, remnants.. it’s all being used. We have some good cooked chicken, some sauteed onion, now let’s make the sauce.

We’re going to let the tomato, paprika, salt, pepper, chicken, onion and chicken broth all cook together. We’re going to check to make sure the chicken is at a safe temp, but let them flavors incorporate. While that’s doing it’s thing:

The Result

We’re close to finishing, so let’s add the cream and finish it off. The smell in the kitchen was great, and I couldn’t wait to get into it.

Now that’s a dish. If you’ve been here for a minute, you know it’s primarily a main dish kind of blog (for me). I’ll cook steak and slack off on the sides. For this one, We did the chicken paprikash, added the dumplings, and it was such a delicious spot-on meal. I will absolutely make this one again.
