Hey there y’all! Got a tasty dish for you today! Pretty simple and straightforward too!


For today’s dish we need some greens-kale, romaine, baby spinach- your choice. We got some delicious romaine at the farmer’s market along with the zucchini and broccoli. I had to hit the Whole Foods twice for the other veggies. The first time grabbing the cauliflower then returning for the peppers (because I forgot them and Mr. FBBQ really wanted a couple slices of WF pizza). Considering he got me the flavor bombs (the little tomatoes) earlier, I returned to get him pizza (because I forgot that the first time as well).

Lastly, we need some type of grain. I opted for the wheat berries because I haven’t used them in a while.

Start by cooking the grains. This will take a while and you can prep everything else while they are cooking. You’ll also want to start the broccoli in the vegetable steamer. While these are going, dice up the peppers and cut up the cauliflower into bite-size pieces.

Steam the cauliflower once the broccoli is done. Cut the zucchini into large coins. Cook them in a pan until brown. Not black, like mine. I had the heat too high. They were still edible, even tasty!

The greens are the base for this dish.

Add the cauliflower and broccoli.

Add the crisp peppers.

Half the cherry tomatoes and add those.

Add the grains.

Lastly , the zucchini. Burnt or not.

Add a dressing of your choice. One of my favorites is Dijon Honey Mustard, so I went with that. It was perfect for this dish!
