While I post most things meat, and most things smoked.. that’s not what I eat everyday. I actually enjoy the days MrsForensicBBQ decides to whip up a salad. Now, she normally throws some fancy sprouts, and microgreens.. maybe some seeds and whatever else in there.. but it really is one of my favorite meals. I’ll adorn mine with some fresh cracked pepper, a few hot peppers and maybe a chopped up cured meat.. but I like salad.
I saw this one floating around the internets and knew I had to make it. A nice garlicky Caesar dressing over romaine is about as fancy a salad as I get, so let’s do some tacos with it.
The Prep Table

I don’t know if I can throw credit anyone’s way for the idea, because this thing blew up a few months back and I saw it everywhere. I knew I was going to make it, it was just a matter of time. And also who knows when this thing will post. Speaking of which, I got the rest of 2026 lined up with posts, I just have to write ’em. And even better news, we’re lined up to keep this thing live until 2030 when we’ll re-evaluate again. This is still fun, so we’ll keep on going.
Anyway, we’re going to mix up some bacon and jalapeno in mine.. because it’s exactly that: mine. Chicken, cheese, onion and romaine will round out the toppings. So because we’re making tacos, we need a side. I think this is my last elote post, but hot damn these things did me right.


We’re going to get this RecTeq nice and greasy per usual, so let’s get some beautiful smoked bacon on there. I didn’t go with any seasonings this time, we just want the bacon.
The Process

We got our salad mixed up: Romaine, bacon bits, jalapeno, onion and cheese in the mix. We’re going to taco the chicken and tortilla and top it with the lettuce. We’re going to finish it off with some more onion, tomato and some crushed up croutons and call this a meal


MrsForensicBBQ and I don’t do corn on the cob enough. Even if it’s not the street corn we know as elote, it’s still a nice side. Takes a minute (and no butter for her), but still a nice refreshing side. Nevermind all that grease on that pellet smoker. Look away.

Doing nothing that we don’t already do with smash burgers. We’re going to ball up some ground chicken, throw a tortilla on there and smash it down.

Missed the mark on portion size, but it was for the better. These things were filling! Once we got the chicken cooked safe, flip it and toast the tortilla.
The Result

Mayo slather on that corn, sprinkle with some cotija and some guajillo pepper. Throw our chicken caesar tacos into a taco holder and assemble.

Hit that corn with a little bit of lime and some cilantro and we’re golden. Top the rest of them tacos off and you have yourselves a hugely filling Chicken Caesar Taco. I will definitely make these again. I’d go a little harder on the smash (thinner on the chicken), but everything else was a bullseye. Give this one a try, it won’t disappoint!
