Pasta Primavera

Half-ass pepper left over by Mr. FBBQ

Hello friends!! Another pasta dish for you this week! I didn’t follow the recipe for this one very well (not that I ever do) so it might not exactly fit the definition of pasta primavera. But it was yummy so that’s all that matters!!

Let’s get our ingredients together! Pasta, obviously. For the veggies I opted for bell peppers (including the partial orange one Mr. FBBQ had leftover from his recipe), broccoli, zucchini and yellow squash. Also we will need some garlic, diced tomatoes, and Italian seasoning.

Squash coins

Start the pasta cooking. I opted to steam the zucchini and yellow squash in the pan before grilling it.

Beautiful bells

After the squash is cooked, use the same pan and grill up the peppers and garlic. Steam the broccoli in the vegetable steamer. Heat up the diced tomatoes in a small pot on the stovetop.

Oodles

The noodles are the base for this dish. Top them with the squash coins.

Grilled to perfection! Not to soft, not too hard.

Add the broccoli.

One veggie at a time

Add the grilled peppers/garlic. Technically you can throw all of the veggies in the pan with the diced tomatoes and top the noodles with it all at once.

Almost done!

Top with the diced tomatoes.

Petite diced tomatoes (a fancy way of saying chopped smaller)

Add some fresh basil.

Bought a teeny tiny basil plant. Hopefully I can keep it alive to get more use out of it!

Season with the Italian seasoning (and some shaved parmesan if you desire) and enjoy!
