
Happy Monday, y’all! I’ve got a few pasta dishes coming your way this week and next! It was time to change things up a bit! So, in addition to pasta, we will need some whole wheat panko, diced tomatoes, an avocado, white balsamic vinegar, some walnuts, sea salt, garlic, and fresh basil.

Start the pasta cooking. In a small pan heat up the diced tomatoes and the chopped garlic for a few minutes. Peel and core the avocado.

Mr. FBBQ had some leftover tomato paste from his recipe so I didn’t want to waste it. I added that to the blender with the avocado, the diced tomatoes, and the garlic. Blend all of that together. Your sauce will come out a creamy light orange, similar to vodka sauce (as Mr. FBBQ pointed out).

The pasta is the base for this dish.

Toast (not burn) the walnuts and chop them into little bits.

Toast the panko on the stovetop.

I totally forgot the recipe called for spinach and I felt like it needed some veggies so I halved some cherry tomatoes and added those to the pasta along with the creamy sauce. It was definitely a good choice.

Top with the toasted panko and the chopped walnuts and some fresh basil and enjoy this delicious dish! I added a little bit of shaved parmesan to it and it was perfect!
