
So I often meal-prep ahead of time. Meaning we grocery shop and I wash and clean all the veggies and dice them up however they need to be cut. It saves a lot of time on cooking days!! That’s what I did here. It was kind of funny though because I put “zoodles” on the grocery list (our list uses AI to categorize the items) and apparently “Zoodles” are “Pet Supplies.”
So, aside from zoodles (zucchini spirals), we need a whole wheat long pasta (think spaghetti or linguini), mushrooms, garlic, bell peppers, a sweet onion, basil, cannellini beans, diced tomatoes, and Italian seasoning. I’m pretty happy that my basil plant is still going strong. I don’t always have the best luck with plants.

I rarely drink anymore due to my migraines but today I really wanted some homemade sangria. So I made some! It was delicious and at the time I am writing this I have no headache.

Cook the peppers and onions in a pan. Set them aside.

Next, in that same pan, cook the mushrooms and garlic. Add the peppers and onions back to the pan and add the beans just to warm them up.

Lastly, add the zoodles to heat them up a bit. Season with the Italian seasoning and stir it all together.

Cook the pasta according to the package.

Warm up the diced tomatoes in a pot.

The noodles are the base for this dish. Top with the veggie mix from the pan and the diced tomatoes.


Top with a little bit of parmesan cheese and the basil and enjoy!!
