Zesty Kale & Couscous Bowl

Hello everyone!! What makes this dish zesty? Well, you can either look at the ingredients photo or wait until the end. This dish was so easy to make! It was very light as well. I obviously made it in the fall, but it could easily be a summer dish.

Simple veggies

Our veggies are simple: bell peppers, red onion, little tomatoes, kale (or a kale mix), and a lemon.

Chickpeas and kale mix

We will also need chickpeas and couscous. While the couscous is cooking, slice and dice the peppers, onion, and tomatoes. Drain and rinse the chickpeas.

Veggies on top

The kale will be the base for this dish. Top that with the chickpeas and the diced vegetables.

Such beautiful, bright colors!

I love how colorful healthy food is! You know you’re doing something right if you’re eating all the colors of the rainbow! Add the couscous once it’s cooled. Lastly, add the ZESTY, the lemon! Squeeze lemon juice on this simple salad and enjoy!!!!

There’s lemon juice on there, you just can’t see it. THE ZESTY!
