MrsForensicBBQ was shocked that there was a package delivered bearing my name instead of hers. She inquired what a Tuckaway was and I had to confess I had no idea. Then a bit of research and I learned this spot in Raymond, NH is known for their steak tips. Many thanks to our friends over in that mythical region they call “New England” – I can say for sure.. ain’t no myth that the Tuckaway does have a damn good steak tip.

We got a new set of pans, and I thought what a way to break ’em in. Received these on a week night, so of course I had to make ’em immediately after work. I’ll show you how I pan seared ’em on night one. Night two, I took ’em outside and threw ’em on the GrillGrates. Of course, the grill was the better of the two, but I’ll show you both anyway.
The Pan Sear


I didn’t know better, I didn’t trust. I threw in some jarlic with the pan sear and then my first taste of the Tuckaway Tip was impressive. Not only did I not need the jarred garlic, I felt I insulted the meat and marinade. These things were incredible. So much flavor was contained in each morsel, I was taken aback. I completed my plate (cooked rare) and couldn’t want for the Grates on the weekend.

I let those last three pictures go without comment, because I wanted you to see the progression of the cook. As they developed that crust, and eventually onto the plate, they were still so juicy. I went for a medium cook on these ones and this was the right play. Wood-fired and grate-seared, I can’t imagine a better steak tip.
