Gnocchi with Vegetables

As promised last week, this is the second installment of Migraine Monday. I actually made last week’s post and this one on consecutive days, after struggling with a migraine (then severe nausea) for a week. So, I apologize in advance for the poor quality, missing things, and lack of significant photos. And whatever else I may have messed up due to brain fog.

The first thing is that the recipe had called for me to make the gnocchi from scratch. Nope. Not feeling the way I did. I cheated and bought some from the store.

Not homemade

The cauliflower, zucchini, and mushrooms were all chopped yesterday and the mushrooms were cooked in advance (because I thought I needed them for the chili). It still worked and actually saved me a little time today. The Brussels sprouts were first to go into the vegetable steamer, as they take a while to cook.

What does not take a while to cook? Gnocchi. So the package said “cook until they float.” Not very helpful, Belladoro! I wanted to know appx. how long they would take. This is where I used The Google (It’s a long running joke in our house that if you put “the” in front of things that do not require it, such as The iTunes or The Facebook you are old. So we do it as a laugh.) 3 minutes until I had some floaty potato pasta. AND as I notice in the picture above it says 2 minute cooking time. My apologies, Belladoro! I just didn’t look hard enough. Though you might want to consider putting that under the directions on the back.

In a pan with some water start cooking the zucchini until it softens. Then you can grill it a little to brown it. At this point I added the pre-cooked mushrooms to warm them.

Drain the gnocchi. Once the Brussels sprouts are cooked steam the cauliflower. Sometimes I think I should buy a second steamer. I use it often.

They kind of look like weird little beetles don’t they?

The gnocchi are the base for the dish.

Probably would have been better had I made them from scratch, but they’ll do!

Add the zucchini and mushrooms.

Cut the stems off the Brussels sprouts

Add the Brussels sprouts.

The Brussels sprouts have been stabbed with a fork. Made it easier to hold them while I cut the ends off.

Add the cooked cauliflower. You can add a little parmesan cheese as well.

Not the actual final dish!

As I sat down to eat I realized that I totally forgot to grill and add the onion!!! Back to the kitchen I went and added some onion to the dish. You could also experiment with some seasonings, maybe diced tomatoes or some kind of red pasta sauce.

Hopefully by next week my migraine, nausea, and brain fog are things of the past!!!
