‘Tis the Season – Pumpkin Seeds!

Not really a smoker post, but we threw some pumpkin seeds on the RecTeq and added that flavor! Short post, but might give you an idea this autumn.

The Prep Table

We were watching a young human and she wanted to carve some pumpkins. We bought a couple small ones – which she decorated a couple pumpkin cats. Then we had the monster carver.

Don’t know what you were expecting for the prep table. Carve a pumpkin, save the seeds! Get that goo of ’em and rinse and dry!

The Process

Drizzle with olive earl, sprinkle with rub, and add heat.

But seriously, we had a pile of seeds from that big ol’ pumpkin and while my niece didn’t want to touch the pumpkin goo – my wife did a bang-up job cleaning up the seeds and leaving them out to dry for me. No stray pumpkin strands, just clean seeds. I love you.

Not a lot to this one. But did it up two-ways.

So I just threw a small amount of oil on there and mixed it up – trying to coat each one. I had baked pumpkin seeds all the time growing up, so of course I’m going to throw them on the RecTeq. I used my original rub on half of them, and then one of my favorite heat seasonings on the other. A local shop sells their Jayell XXX Rub and it’s fantastic. It’s one of my go-to for chicken wings, so definitely go check them out!

475 degrees for like 10 minutes

I was prepping the Cornish hen smoke and while it was brining, I did this. I wanted to use Pecan wood for the bird – so I was either going to scoop out some Comp blend pellets or burn ’em up. Used them as the fuel for this one.

It wasn’t going to take long, I checked them every couple of minutes, mixed them up so they didn’t stick too bad, and pulled them when they started to brown up pretty good. I think the actual time was about 13 minutes, but definitely get to checking around 10. 425 isn’t a smoking temp, but it was a roasting temp for these guys.


The Result

Not an everyday item, but perfect for October

My original rub put a nice sweet flavor on there, no doubt from the brown sugar. Unfortunately, it was still too spicy for my wife – so she pawned them off on people. I threw my Jayell seeds in a mason jar went for a nice generous handful at a time.

Surprisingly, I didn’t get too much heat from the Jayell like I’m used to. Maybe I dusted cautiously – but I will put some more on there next year. It still had that flavor I’m used to, just lacked the zip. Either way, it was better than just a salting and the wood fire did its job.

Successful cook. Short post, not a lot to it. If I’m going out to the grill, I’ll be putting them up on here, so here you go!


The Recipe

Smoked Pumpkin Seeds

After you've carved the pumpkin and you got the mounds of pulp – couple that with the crave to get out to the smoker. Here's a quick snack smoke for y'all to try!

Ingredients
  

  • Pumpkin Seeds
  • Olive Oil
  • Favorite smoky seasonings I used Fine Swine & a spicy hot

Instructions
 

  • Clean up the seeds and let them dry out. By far the worst part – removing all the pulp.
  • Preheat pelletsmoker to 475.
  • Place a small amount of olive oil on the seeds to coat.
  • Sprinkle with favorite seasonings.
  • Place into smoker for about 10 minutes.
  • Eat.
