
Hey y’all! Today I have a very delicious salad bowl for you! This was probably one of my favorite meals! So what do we need? Sweet potatoes, obviously. An avocado, cherry tomatoes, a lime, farro (or your choice of grain), maple syrup, baby spinach (or other greens), chickpeas, a red onion, and some cumin.

Start by cooking the sweet potatoes in the oven. Glaze them with maple syrup.

Drain and rinse the chickpeas. Douse them with lime juice and coat them with the cumin. Toast them in the toaster oven until they are crispy.

Cook the farro. Half the cherry tomaotes, dice up the onion, and slice up some avocado.

Add the greens to a bowl. Put the tomatoes, avocado, and red onion on top of the greens.

Once the sweet potatoes are done cooking and have cooled off a little bit add those on top of the greens as well.

Add the farro once it is cooked and cooled a bit as well.

Add the chickpeas. I topped this salad with some Honey Dijon Mustard dressing and it was spot on!!
