
Happy Monday, y’all!! Got another cozy stew for you this week! We will obviously need some cauliflower and sweet potatoes. We also need some onions, quinoa, lime, scallions, garlic, chickpeas, and vegetable broth.
Start cutting up the sweet potatoes and steaming them in the vegetable steamer until they are soft. While the potatoes are cooking, grill up the onions and garlic in a pan. Add the scallions near the end.


In a large pot add the vegetable broth and chickpeas. Simmer for now, until it’s time to add the rest of the ingredients.

Cook the quinoa. When the sweet potatoes are soft, remove them from the steamer and add them to the pot with the chickpeas and broth. Add the cauliflower to the steamer and cook that until it is soft. Add that to the pot as well. Stir in the onions and mix everything together well. Add the quinoa. Squeeze some lime juice into the mixture. Garnish with cilantro and serve warm!
