Spaghetti w/ Broccoli and Peppers

Simple spaghetti meal

Hello friends! Today I have a very simple, easy to make dinner! We will need some whole wheat spaghetti, bell peppers, a sweet onion, diced tomatoes, broccoli, a lemon, garlic, pine nuts, and some basil. I was hurting quite a bit on the day that I made this. We saw my surgeon that morning and my surgery is in about 10 days, so he told me to stop taking Motrin because it thins the blood and that is not good for surgery. I can take Tylenol, but that doesn’t really help like the anti-inflammatory Motrin. But soon I will be on the other side of this!

Steamy peppers and onions

To start, cook the peppers, onions, and garlic in a pan. At that same time, cook the broccoli in the steamer and the spaghetti in a pot with some water.

Drain the spaghetti once cooked. That will be the base for this dish. Add the diced tomatoes to the pan with the peppers, onions, and garlic. This will warm them up a bit.

Add the peppers, onions, garlic, and diced tomatoes on top of the spaghetti.

Top with the broccoli. Toast the pine nuts and add those on top of everything.

Add some fresh basil. You can top with a little bit of shaved parmesan cheese if you like!

The Finished Dish

I really liked this dish (not just because it had cheese on it). The basil brought a fresh, herbal taste to it. The pine nuts gave it some delicious crunch. And the diced tomatoes were a delicious, healthy substitute for pasta sauce.
