Red Lentil Sweet Potato Curry

Halloween Squish Clippy-Do in the background

Happy Monday, Y’all. I have a delicious recipe for you today! And if you make too much like I did you can freeze it! So we need sweet potatoes and red lentils, diced tomatoes, tomato paste, cilantro, a lime, couscous (or brown rice), a green bell pepper, garlic, vegetable broth, a sweet onion, corriander, cumin, curry powder, and ginger.

Start by cooking the lentils and couscous. You can steam the sweet potatoes as well.

Spicy! (not spicy-hot but spicy-delicious)

Mix up the seasoning in a small bowl. Grate the ginger and mix in with the corriander, cumin, and curry powder. Dice up the pepper, onion, and garlic and brown them on the stovetop.

Lentils (they were orange when I started out)

Start a large pot with the diced tomatoes and tomato paste. Add ingredients as they cook, such as the lentils, couscous, and peppers/onions/garlic.

Building our bowl

Add some vegetable broth to keep it moist. Add in the seasoning and the sweet potatoes. Stir everything together really well. Squeeze some lime onto it and serve garnished with cilantro.

Perfect Fall Dish!
