Lola’s Family Reserve Sauced Chicken Wings

This wing cook is the one that set the stage for the next couple of wings cooks. This one was by far the hottest wings I’ve made to date. So hot, that the next couple had exactly zero heat. This one had the mouth hot, the stomach hot.. it was all hot. But yet, it was delicious. These wing posts will be short and snappy, because I’ve already perfected the wing. You know this because I made a whole pile of wings last year in an effort to bring you the best recipe. A year later, I have not altered anything.

In fact, I reference it every time I make wings now.

Peep the cart!

So before we get to this one, harbor freight came through with this cart. I don’t think it was planned for the cooking usage, but it works perfectly. The fact that the meat grinder aligns on the bottom was just enough to make it worthwhile. The power bar on the back so I can plug in both my pellet smokers, my foot pedal.. it’s magical.

I saw this sauce at the store and when I read the label, I knew I had to buy it. Carolina Reaper peppers don’t have the best flavor, but it obviously brings the heat. Habanero’s on the other hand – my favorite flavor. So I bought it and you can see, I’ve used it quite a bit. But this time we’re going to toss it on some wings.

Smoked, cooked, and crisped. 180 for 20 min, 245 until 145, 445 til crispy (~180F).
Here we go..

Wings are cooked, time to bathe ’em in that “VERY HOT” sauce. I must be part of the Family now.. because it was reserved for me.

Fries because why not.

These things were almost too hot for me to eat. And that’s saying something. You know we do the 4N6BBQ Presents… tasters once and while, and this one far surpassed all those. I don’t know if it was because they were entirely coated.. or because that sauce stuck so well to the hot wings.. but hot damn, these things cooked.

Side of ranch

I hardly ever throw a ranch or bleu cheese dipper. I don’t really ever need it, but today I needed it. The problem was, I only had one ranch product in the fridge: Ghost Pepper Ranch. Didn’t help whatsoever. But hey, was happy with the journey.. the sauce was fantastic.. but it’s not for everyone.
