Pineapple Stir Fry

Happy Monday, y’all! Got a bit of a spin on a basic dish for you today!! We had a bit of soy sauce left over and it was expiring, so I decided to use it and make a stir fry. But I wanted to jazz it up a little, so I decided to add some sweet pineapple!!! In addition to pineapple, I went with broccoli and cauliflower, bell peppers, an onion, and mushrooms. I chose brown rice and will be cooking it in vegetable broth.

Mushrooms, kept separate in case Mr. FBBQ wanted some of this dish (he dislikes mushrooms)

Cook the mushrooms (and bell peppers, onions, and eventually the pineapple) in a pan until they are browned.

Steam the broccoli and cauliflower in the vegetable steamer.

Obviously the rice is the base for this dish.

Add the mushrooms, bell peppers, onions, cauliflower and broccoli.

I ended up having to move it to a bigger bowl!

Top with the pineapple and some soy sauce and you are ready to enjoy!!

Cooking time was long for this simple dish.
