Lobster Tails w/ Spicy Butter, Asparagus

I was thinking about future tailgate ideas and about how it would be difficult to top the Lobster Roll venture. Then I got to thinking – I don’t think I’ve posted any lobster tails on here before. I know I’ve made them before.. probably only once before because they aren’t my favorite.. but they’re still pretty darn good once and awhile. And it’s always a rare feat for me to showcase a full meal, so we’re going to do some asparagus as well.

Of course, spicy butter

I’m wondering at this point, if it’s possible for me to cook just normally.. not have it be spicy something. I cook for me, and it’s what I want – so you shall enjoy. Lobster is just going to be a quick smoke – the fancy will come from the butter. And I was curious how this tube-o-hollandaise would be, so I picked that up for like a $1.

Not the biggest, but also the cheapest

Not trying to break the bank here, I took two of the three tails they had available. I think they had a sale going on today.. but it was at that kind of market that nothing is ever really sale price. I snagged ’em anyway. We’re going to split the tails, expose the meat. Cook ’em up good with some asparagus and finish ’em off with that butter.


The Process

Simple ‘Sparagus

Just some salt and pepper on the green twigs, we were going to have enough flavor from the butter and hollandaise. Just a peppery bite was all I really needed here.

Splitting was a bitch

For some reason, I had a hell of a time with these shells. Made it work, but it wasn’t the most elegant split I’ve ever done. Make sure to watch the color change on them tails as we progress. Also, watch how it aligns with the wiltiness (?) of the asparagus. Timed this one nicely.

This butter tho

Butter with some garlic, red peppercorns, hot sauce and parsley. This little cast iron skillet has become one of my favorite dishes. Should’ve mentioned, I threw some spicy Old Bay Seasoning on the lobster as well.

Finishing up

Just about 5 minutes left to go, we’re going to brush that butter on the meat and make sure to get that garlic and parsley on there. Want these things to be flavor packed.

Great bite

Again, can’t do this everyday, but this particular night was fantastic. The hollandaise on asparagus was good – nothing crazy. The garlic butter lobster was great. Well cooked and delicious. MrsForensicBBQ was making potatoes, so I stole a couple for the picture. And for my belly.
