
Hello everyone! I posted the photos for this in two separate images, as there was a lot of different stuff that went into the seasoning! For the vegetables, we need zucchini, cauliflower, broccoli, Brussels sprouts, a sweet onion, and some diced tomatoes. We also need (obviously, it’s in the name) quinoa.

For the seasoning we need cinnamon, ground cardamom, turmeric, ground ginger, ground cloves, ground corriander, ground cumin, paprika, and garlic powder.

Mix all those separate spices together for the Middle Eastern Seasoning. Cook the quinoa on the stovetop. Quinoa actually cooks pretty fast. It’s a good go-to for a week night dinner. You’ll also want to cook the vegetables. I started with the zucchini on the stovetop. I put the cauliflower and broccoli in the vegetable steamer.

Once the zucchini was done on the stovetop, I cooked the onions in the same pan.

Once the cauliflower and broccoli were done in the steamer, I replaced them with the Brussels sprouts.

I heated up the diced tomatoes in a small pot. The quinoa was the base for this dish. I topped it with all the vegetables and added the Middle Eastern Seasoning on top (eventually mixing it in before I ate). Enjoy!
