Maple Sweet Potato and Bean Stew

Happy Monday y’all!! You know sweet potatoes are one of my favorite vegetables. You also know that I often roast maple sweet potatoes. Well, today I am putting those maple sweet potatoes into a stew! So, we are gonna need some sweet potatoes, some bell peppers, red beans, pinto beans, diced tomatoes, a sweet onion, vegetable stock, and some garlic. We will also need some maple syrup!

Peppers and Onions

Start by dicing up the sweet potatoes and drizzling them with maple syrup. We are going to roast them in the oven. While those are cooking, fry up the peppers, onions, and garlic in a pan.

Multi-color beans

Drain and rinse the beans. Add them to a large pot with a small amount of vegetable stock. Put the heat on low to warm them up.

Pot o’ beans

Add teh diced tomatoes to the pot o’ beans. Once the peppers and onions are done cooking you can add those as well.

Once the sweet potatoes are done cooking remove them from the oven and add them to the pot as well.

Stir everything together and enjoy this absolutely delicious dish!! FYI, you can freeze some for later if you make too much!
