Korean Bean Bowl

Hello everybody!! Got an interesting one for you today. And no, the beans themselves are not Korean. Let’s get to it!

For this dish we need Zoodles (a.k.a. Zucchini Noodles) not to be confused with poodles. Definitely not to be confused. We also need some red beans, rice ( I opted for whole grain brown Basmati), sesame seeds (not to be confused with Sesame Street), BBQ sauce, vegetable broth, garlic, shredded carrots, tamari, brown rice vinegar, and onion powder.

I didn’t take a lot of pictures during the process of assembling this dish. I apologize for that. But it was pretty simple. Cook the rice in the vegetable broth. That will take some time, so while that is going on you can combine the zoodles and the shredded carrots.

Jumping right into this one!

In a bowl, whisk together the brown rice vinegar, onion powder, and the minced garlic. Add the zoodle carrot mix and let it marinade. Drain and rinse the beans.

I love when the dishes are colorful!

The rice will be the base for the dish. Add the zoodle carrot mixture and the beans.

I rarely use BBQ sauce in my dishes!

Top the beans with the BBQ sauce and add some tamari to the rice.

Toasted seeds

Add the toasted sesame seeds.

Korean Bean Bowl!

Top with scallions and enjoy! This dish tasted unlike most of what I make. It was a nice change of pace!
