Honey Habanero Chicken Wings w/ Elote

This was one of those cooks that I didn’t think would make a post, but it turned out so good I had to write about it. One of the things that drives me crazy is the mango habanero fad. It’s not that good, and it has never been that good. Either the sweet is too sweet or the heat isn’t that great. I don’t know why these are an option. So I wanted to make my own sweet and heat sauce.

The Prep Table

ForensicBBQ “Bird Rub” – name it!

This is by far the best wing blend that I’ve made. It’s not an overpowering rub, but has just enough herby to make it flavorful.

The Process

Corn and Wings

I’m going to showcase some elote because similar to the mango habanero sauce, I didn’t understand a mayo-slathered cob. Until I made it myself. The one I had at a mexican restaurant, not great at all. These ones, we’re delicious.

The pellet smoker chicken wings

Do yourselves a service – steal my recipe over here: The Chicken Wing Gauntlet. I worked for you so you didn’t have to. These things turn out perfect every single time.

Finished up to crisp the skin.

The Result

Pure habanero sauce, mixed with honey

This is the sweet and heat that mango habanero wishes it was. I know that ‘hot honey’ is riding it’s post-covid wave to unbelievable levels of popularity. But it’s never hot enough. Blending a super hot sauce with your every day honey is the move. If you’re like me and are apprehensive of sweet and heat, these are them.

We got some more wings, some more elote coming up!
