It’s a good thing this post was meant to showcase the twice baked potato, because as I write this months later, I don’t remember the beef chuck riblets at all. I do remember walking through Walmart and seeing these – and had to buy ’em. But how did they taste, how did they turn out? I can not recall at all.
But I really wanted to make more sides on this here food blog. So I was excited to make the twice baked potato. Let’s get after it.
The Prep Table

We’re going to do the baked potato, and then blend it with some instant mash. Maybe it’s kind of cheating, but I don’t really care. It’s going to be super creamy and soft, yet still have that flavor we’re looking for. Can’t bring out the bacon without smoking it, so here it goes.

All you need to smoke bacon is 225F for 2 hours. I’ve done this more times than anything else, and it’s perfect.


Most of you pellet smoker operators will line your trays with foil to make for an easy clean up. Until that grease gets under the foil one time. Then you’re scraping and you don’t care anymore. This happened to me many years ago, and I’m just scraping post cook every time.
The Process


We’re going to dress up this baked potato with some green onion, cheese, and of course bacon. We’re going to throw this back in the oven, so we don’t have to worry about this being cooled down. Time to check on the potatoes.

So we’re going to cut these open and scoop out the innards. We’re going to throw in some butter (of course are), some cream milk and then some instant mashed potatoes. We’re going to overload these and make ’em pop.

And no, I don’t use sour cream on the potatoes. And I grew up just leaving the exterior of the potato while I ate the fluffy tater. As I’ve grown, and especially when I see something like the potatoes below, I was eating the whole damn thing.

Let’s get these out and plated.
The Result


Absolutely zero reviews on the beef riblet. Maybe I’ll make it again and remember what I forgot. I mean, it looks good – pulling from the bone.. seasoned and sauced – but I can’t for the life of me remember that at all.
I do remember the potato. I do remember gifting the leftover potato. And I will make this potato again and enjoy every bit of it like I did these. Fantastically unhealthy, but delicious all the same. Thanks for my random ass post, adding a little hilarity to this thing. Until next week!
