Hawaiian-Style Chicken Dog

What, you thought we were done with the hot dog posts? C’mon now. The local market had some Koegel Chicken Vienna’s on discount, so I snagged them up, froze ’em and waited for the right opportunity. Spring has sprung – we’re coming off a thunderstormy morning, so a muggy afternoon needed a refreshing lunch/dinner. Hawaiian-Style Chicken Dog? What is it, why did I do it.. read below.

The Prep Table

Quite the blend of fresh

A lot of ingredients above, but it should be relatively simple. If you want to store-buy your teriyaki sauce, by all means. If you want to jazz it up and make one yourself, we’ll do just that. We’re going to grill up some pineapple slices alongside the chicken dogs and really just top with a lot of fresh: cilantro, jalapeno, red onion. The only other abnormality will be the top sliced Hawaiian bun.

The Teriyaki blend

Over medium-heat, I threw in some water, soy sauce, ground ginger, garlic, red pepper flakes, brown sugar and honey. When it started to talk to me (bubbling) – I threw in the cornstarch/water mix to thicken it up. Gave it a good mix and this is what I got:

Let it cool, transferred to a mason jar, and then one of my 2oz cups for later. This far surpassed my expectations. Could’ve been the over-garlic I do, maybe the red pepper – but it was thick, flavorful, and exactly what this idea of mine needed. We got the sauce nailed down, now for the easy part.


The Process

The typical “add heat and eat” routine. RecTeq at 450 degrees with GrillGrates.

We’re making two dogs, per usual – but I needed to try that third dog naked to taste what that chicken dog has to offer. I trust Koegel, they do it right.. but I’ve never had the chicken variety before. (Spoiler: they do it right.). Grilled pineapple tastes like.. well, pineapple. But it was nice to keep the temperature right for the meal. The pineapple was on there for about 2 minutes a side – just enough so you saw the grill marks.

When that dog starts to split, you know she’s cooked and good. Now we’re going to layer these up. I didn’t really have a plan as to the “right way” to do it – it just had to taste good for sure. It’s always nice when they’re Instagram/Twitter friendly, but it ain’t always necessary.

I didn’t mention, but I put a slight crisp on the bun. I went with the top split so I put about a 45sec-1min grill on three of the four sides. After I pulled the bun, I compressed the inner bun to allow for more room for the accoutrements. Dropped the split Koegel in, lined one side with pineapple, one side with red onion.

We splashed some cilantro to cover the dog and some thinly sliced jalapeno to top it off. I got these jalapeno peppers at a local market and holy hell, these ones packed a punch. I think I’ve mentioned before, I’m at the point in life where I eat these like green peppers, but every once and awhile.. you get a solid batch and it beats you up. (You can see I left it seeded, I always do because I want that heat).

I thoroughly enjoyed this dog. That garlicky teriyaki with the fresh veggie on a chicken dog.. complimented with the sweet grilled pineapple.. You’re going to want to take this recipe. I’m pretty sure I made these recipes easy for you to print (or save to PDF) and try it out.

I’ll be honest with y’all – I put the recipe in there so I know how to make these the next time. That’s why you don’t see “serving size”, “nutrition facts”.. you get some weird jargon from me. The Recipe

Hawaiian Chicken Hot Dog

Grilled pineapple, cilantro, onion and a homemade teriyaki splashed on a chicken dog – nice twist on an old friend.

Ingredients
  

Hawaiian Chicken Dog

  • 2 Koegel's Chicken Viennas
  • 2 slices Pineapple grilled
  • 1/2 Cup Cilantro chopped
  • 1 Jalapeno thin sliced
  • 1/2 Cup Red Onion thin sliced
  • Teriyaki sauce to taste
  • 2 Top-Split Hawaiian buns

Teriyaki Sauce

  • 1 Cup Water
  • 3 Tbsp Brown Sugar
  • 1/4 Cup Soy Sauce
  • 1 Tbsp Honey
  • 2 Cloves Garlic minced
  • 1 Tbsp Red Pepper Flakes
  • 1/2 Tsp Ground Ginger
  • 2 Tbsp Cornstarch
  • 1/4 Cup Cold Water

Instructions
 

Chicken Dog

  • Fire up the RecTeq to 450 degrees with GrillGrates. I hit the Grates with some Duck Fat spray, but non-stick it how you like.
  • Chop a pineapple, grill each side for about 2 minutes – until you get the grill marks.
  • Grill hot dog until cooked (that Koegel vienna split – for those who know, you know)
  • Top your dog with cilantro, pineapple, red onion, jalapeno and drizzle the teriyaki on there.

Teriyaki Sauce

  • Over medium-heat, combine 1C water, bro sugar, soy sauce, honey, garlic, ginger.
  • Combine cornstarch and 1/4C water, whisk until dissolved. Add to saucepan
  • Heat until as thicc as you want it.
