
Friends, we are back to wonderful, tasty, healthy posts! The holidays are taxing on everyone. Stress, travel, poor food choices… We all experience it. The key is bouncing back and bringing yourself back to how you normally live. I actually get excited to eat healthy. I love how it makes me feel. The meals I make are delicious and filled with wholesome ingredients. So let’s get to it!
Today’s dish requires carrots, garlic, onions, bell peppers, diced tomatoes, bay leaves, squash, red beans, vegetable stock, and paprika. Slice up the bell peppers and onions and mince the garlic. Cook all of that in a pan until browned.

Peel and cut up the squash. Steam it in the vegetable steamer until it’s soft. Peel and cut up the carrots. In a large pot, add the vegetable stock, the carrots, the beans, the diced tomatoes, and the bay leaves. I had some celery on-hand for another recipe so I threw that in there too. Simmer that for a bit then add the squash. Once the peppers/onions/garlic is done cooking add that to the pot.

Stir all the ingredients together in the pot and add the paprika. Stir that in and you are ready to enjoy this delicious, nutritious dish!!!
