Burrito Baked Potato

Hey there everybody!!!! Got an interesting new dish for y’all today! Burrito Baked Potatoes!! Pretty simple to make, very tasty! So, we need Russet potatoes (obviously), black beans, a sweet onion, an avocado, corn (don’t forget to use it like I did), cilantro, and pico de gallo. We couldn’t find pico in the stores so I decided to make my own. To make the pico I used lime, a white onion, tomatoes, and cilantro.

Stabby potatoes

Start by stabbing the potatoes with a fork all over. This lets the steam out and helps cook the potatoes more thoroughly. Cook the potatoes in the oven at 400 degrees for about an hour. If you prefer softer skins, wrap them in foil. For a bit of a crunchier skin, cook sans foil. These potatoes cooked weirdly. They are the same size and I cooked them at the same time in the same way, yet one finished way before the other.

Homemade Pico de Gallo

For the pico, dice up the white onion, the tomatoes, and some cilantro. Mix it together and add lime juice. I must say this pico turned out delicious and I’m really glad I decided to make my own from scratch.

Grilled onions

Grill the onions in a pan.

Heat up the beans in a small pot.

Obviously the potato is the base for this dish.

Add the beans. And the corn if you remembered to cook it, unlike me.

Add the pico de gallo.

A little bit of avocado

Top with some avocado slices and cheddar cheese if you so choose! Enjoy!!!
