
Happy Monday everybody! I have another delicious pasta salad for our summer series! You can see Bernadette (one of our cats) in the background of this photo. She was recently diagnosed with diabetes. Not surprising since she was like 18 pounds and eats anything she can get her paws on. She’s now on medication and back to bullying the other cats out of their food. Any time I go in the kitchen she thinks it’s feeding time. She’s going to be back up to 18 pounds in no time at this rate!
Anyway, for this pasta salad we need (shocker) pasta! The original recipe called for bow tie pasta but I didn’t have that so I went with Protein Penne Pasta (PPP). We also need some bell peppers, tomatoes, scallions, black beans, and corn. I have a lot of frozen corn so I went wih that option. But the bell peppers, tomatoes, and scallions were from the farmer’s market!

Drain and rinse the black beans.

Dice the peppers.

Cook the pasta. Once it’s done, drain and rinse it with cold water.

Cook the corn. Drain and rinse and set aside.

The pasta is the base for this dish.

Add the peppers and the diced up tomatoes.

Add the corn.

Add the black beans.

Garnish with some scallions.

I added a little shaved parmesan to this dish. I still felt like it needed something else, maybe a dressing? I would love to hear your suggestions!!
