African Peanut Stew

First time for peanut butter in a meal!

This is one of the more unique dishes I’ve made. I’m sure you all have noticed that I tend to make very similar dishes with very similar ingredients. I know what I like! But I am willing to try some different things. This is one of them. I admit that I was a bit nervous with this one. But that was unnecessary because it turned out delicious!!!

We need some sweet potatoes, bell peppers, a sweet onion, some garlic, ground ginger, diced tomatoes, baby spinach (or kale), peanut butter, peanuts, brown rice, and some vegetable broth.

Pan o’peppers

Dice up the bell pepper and onion and start cooking them in a pan. Mince the garlic and add that as well. Add a little bit of the ground ginger and mix it up in the vegetables.

Minced garlic

Start cooking the farro in vegetable broth. Cube up the sweet potatoes and add them to the vegetable steamer.

The Pot

Once the sweet potatoes are soft, add them to a large pot.

Diced tomatoes

Add the diced tomatoes to the pot with the sweet potatoes.

The veggies

Once the peppers/onions/garlic are done cooking in the pan add them to the pot with the sweet potatoes and diced tomatoes. Add the rice as well once it’s done cooking.

Little bit o’green

Add some of the greens. Stir everything up together. Add some of the peanut butter and stir that in.
