What the heck is a zoodle??? You may have seen them in the store. You can actually make them yourself! It’s simply a zucchini noodle. Zucchini (or any kind of squash) cut into little ribbons to resemble noodles. I don’t have a noodler (not sure it that is what they are called, but it sounds cute), so I bought them pre-noodled. In this instance I bought zucchini and yellow squash ones.
This recipe was super easy to make. I started with some garlic and shallots. Those go into a pot and are cooked until they start turning brown. Add the Arborio rice and some vegetable broth mixed with water. Allow the rice to cook, stirring often. This will take about a half-hour.
I softened the zoodles a bit by simmering them in some water. You don’t have to do this, but I wanted them a little less crisp.
Once your rice/shallot/garlic mix is done cooking, add it to a bowl. Top with the zoodles and some little tomatoes.
I even got Mr. FBBQ to try this dish!
Simple, easy weeknight dinner.
