Here’s a bit of a fun one. This mexican pizza thing has always had a cult following. I remember when they got rid of it, the internet uproar was heavy. I don’t really remember this ever being my go-to growing up. I always had the crunchy taco with hot sauce. That was about it. Maybe a chips & cheese (w/ jalapeno) – but not a mexican pizza.
The mex cuisine has always been a favorite for me, my family.. and hence, this blog. I’ve done the easy, tried the crazy.. let’s try the cult classic.
The Prep Table

Ain’t gonna be too much of a step-by-step, recipe thing happening for this post. We’re going to make some beans and meat, throw it on a tortilla, cover it with another one and splash some enchilada stuff on top. Ain’t rocket science, so I’m not going to pretend that it is.

Make the meat, make the beans, and get to assembling.
The Process

I did a quick dry toasting of the tortillas to firm them up before making the pizza. We’re going to throw some beans on there and add some meat.

Here is where I questioned things. I’m not going get too much of a crunch from this meal. The tortillas were rigid, but they weren’t crunchy. Oh well, let’s stick to the traditional for this one. Lets get these things topped off.

The Result

Once it’s dressed up, pop it in the oven for a little bit and get that cheese melted. Top it with a little bit of pico de gallo, and you have yourself a mexican pizza.
Now, it tasted good. But it could taste better. Let’s throw down that bean base, a tostada shell in the middle topped with the meat, and we got that added crunch to it. We still want that familiar cheese/enchilada top, but we can do better. Let’s throw some guacamole in there with a cilantro touch. Was it better?
