Sweet Potatoes with Black Beans, Rice

Hey there, y’all! Got some sweet eats for you today! Get it? Sweet potato=sweet eats? Mr. FBBQ is not a fan of my humor. I’m guessing my readers aren’t either.

That’s ok! This dish was fairly easy to make and was absolutely delicious!

Simple ingredients

For this dish we need a sweet potato, a sweet onion, some garlic, a lime, brown rice, an avocado, and some black beans.

Sweets, post-roast

Start by cutting up the sweet potato, marinading it in some orange juice and maple syrup, then baking it at 420 degrees until the pieces are soft.

Rice, Post-cook

Cook the rice. As the rice is cooking and the sweet potato is baking, drain and rinse the black beans.

Black Beans, post-bath

Cut the onion up and mince the garlic.

Cook the onion and garlic in a pan until they are browned.

Now it’s time to assemble our meal! Start with the sweet potatoes as the base.

Lastly, squeeze some lime on top of the whole thing. There was such a great mix of flavors and textures in this bowl. I absolutely loved it!
