
Hi y’all! This will be my last food post for a bit. I am having surgery this week and will be recovering for some time and likely will not be able to cook. I may do a post on my condition and the journey. As Mr. FBBQ pointed out, this is a food blog and a medical post isn’t exactly consistent with that, but I like writing here and it may help some people who have gone through some struggles so stay tuned!
For this dish we need some sweet potatoes, onions, bell peppers, ginger, cumin, garlic, cauliflower, vegetable broth, tomato paste, and some chickpeas.
Start by steaming the cauliflower. Cube up the sweet potatoes. You’ll steam those when the cauliflower is done.

Cook the peppers, onions, and garlic. Add the vegetable broth to a large pot. Drain and rinse the chickpeas and add those to the pot. Once the peppers and onions are done, you can add those to the pot as well. Same goes for the cauliflower while the sweet potatoes are cooking.

Add the sweet potatoes to the pot along with the cumin and a little bit of ginger. Stir everything together.

Serve this dish on a bed of rice. I had some leftover rice and lentils from another meal so I used that.

Top the rice with the stew and you are ready to enjoy this delicious meal!
