This is the most ForensicBBQiest post ever. A steak oscar with Knorr Bearnaise and a Top Sirloin (ha!) Like you wouldn’t hold your plate out if I was serving this.. I don’t want to hear it. Anyway, this was a perfect weekday special. Getting back from work a little late, and you just have a little time to throw a steak on the grill. Let’s do our broke-ass Steak Oscar.
The Prep Table
While I was hoping for some claw or lump crab, this was all that was available at the market. Don’t know exactly what made it Special, but it was tasty. (And the cats got to eat what I didn’t). Now, I’ve never ordered or personally seen a Steak Oscar before, but I just know it had Bearnaise and asparagus associated with it. What I’m going to do is throw the asparagus spears down, throw the steak on top (medium-rare of course), throw a large portion of crabmeat on top and top it all with the sauce. Can’t really screw this up.
Seems like this sauce is more Kerrygold than Bearnaise, but it was delicious nonetheless. I’ve had it at some fancy steakhouses – and this sauce was not that. But it was good and did the job.
The Process
I couldn’t remember if I’ve ever smoked asparagus before. I vaguely remember putting some in a veggie basket with a balsamic drizzle many years ago. But I don’t remember, so I was curious how well smoked asparagus holds smoke. Extremely well. Even though we know pellet smokers don’t spit smoke nearly as well as the sticks – this was fantastic!
This don’t need any commentary. We’re coating this bad boy, so fancy grill marks aren’t necessary for Instagram photos. (Did I mention we’re cutting back on Social media?). Cook until it’s how you like it and let’s get ready to plate.
The Result
Got this all ready to go, and all the while, MrsForensicBBQ was making her Spaghetti w/ Fall Vegetables in the kitchen. I had to throw that on the plate, because she makes some tasty, healthy dishes. This was a flavor punch that was great. I can see why it’s a thing. I’m sure when it’s a filet with a steakhouse Bearnaise and some claw meat or something under there, it’s an experience. This one was fun! Don’t know if I’d go through the effort again, especially after seeing that Kerrygold boat dissolve into the milk and thinking that’s my arteries – but I loved it.
