Southwest Sweet Potatoes

It might be Winter here in the Midwest, but I’ve got a toasty warm recipe for you today!! You’ll need sweet potatoes, black beans, tomatoes, mango, a lime, an onion, cilantro, and an avocado.

Stuff for the potatoes and stuff for the salsa

To start this meal preheat the oven to 420 degrees. Slice up the sweet potatoes. The smaller the pieces, the less cooking time required. While the sweet potatoes are in the oven we will make our salsa!

I made my own diced tomates

You can use store-bought salsa or pico de gallo if that is easier. I decided to make my own pico with mango. I’ve posted a recipe in the past for a mango-cucumber salsa. This is pretty similar but has tomatoes instead of cucumber. You can use canned diced tomatoes or cut up your own tomatoes. I used little tomatoes and cut them into as small of pieces as possible.

Peel and dice the mango. Same with the onion. Mix the two together in a bowl. Add the diced tomatoes and chop up the cilantro and add that as well. Squeeze a lime into the mixture and mix everything up together really well.

Once the sweet potatoes are done baking they will be the base for this dish.

Beans and Avocado

Warm the beans in a small pot. Drain them then top the sweet potatoes with the beans. Peel and slice up the avocado.

Step two: beans

Add the sliced avocado to the dish.

Such a healthy dish!
