
Hello everyone! This week’s recipe was picked out by my friend Jen. We were going to hang out and catch up, so I offered to cook dinner and let her choose the recipe. Unfortunately, I was unable to find fresh zoodles and I do not have the proper equipment for making them myself, so I had to go with frozen ones. In case you were wondering, zoodles are zucchini noodles, or rather zucchini in noodle shape. For this recipe, I also used some of the tomatoes that were gifted to me by a co-worker (also used in last week’s post), some garlic, shallots, arborio rice, vegetable broth, and parsley.

Grill up the shallots and garlic in a pan. Don’t burn them like I did.

Eventually, you’ll steam the zoodles. I didn’t take them out of the freezer soon enough so they were a solid block that I had to melt in hot water. While this was going on, I was cooking the rice in the vegetable broth.

Slice the tomatoes in half. Set these aside.

The rice will be the base for this dish. Top that with the shallots and garlic and the tomatoes.

Top with the zoodles and some parsley and enjoy!
