
Happy Monday, y’all! I decided to make a salad this week because the weather is finally warming up and I love me a summer salad! For this one, we obviously need some citrus. We also need some greens, quinoa, an avocado, and a red onion. Lastly, some cannellini beans.

This salad is so simple to make! Start with the greens in a bowl. Chop up the red onion. Cut up some strawberries. You’ll also want to cook the quinoa.

Drain and rinse the cannellini beans. Add those to the bowl with the greens, strawberries, and red onion.

Peel and section the citrus. I opted for grapefruit and cara cara oranges.

Add the citrus fruits. Dice up the avocado and add that to the bowl.

Top with the quinoa. I toasted some walnuts as well as a last minute idea and added those to the salad. They added a delicious crunch! Enjoy this vitamin C packed salad!
