Pear Barley Salad

Got something different for y’all today! Pears!  These wonderful winter fruits are often overlooked.  I cut this recipe out of a magazine and was really excited to try it.  I love pears and this turned out great!

We will need walnuts, barley, chickpeas, pears (shocker), sundried tomatoes, parsley, arugula, little tomatoes, red onion, apple cider vinegar, olive oil, maple syrup, Dijon mustard, dried oregano, and a dash of salt and pepper.

The weird, off-brand chickpeas Mr. FBBQ bought for me. Why does the can say ‘vegetarian?’ Are there non-vegetarian chickpeas?????

Step one, cook the barley.  While this is going on, we can prepare our dressing.  Mince the red onion.  Add this to the apple cider vinegar and let it marinade for a bit.  Then add the olive oil, maple syrup, and a dollop of Dijon.  Whisk it together and add the oregano, salt and pepper.  Set that aside.

Whisk it. Whisk it good. To paraphrase Devo.

Toast the walnuts in a small skillet and let them cool. 

Chop up the pears.  Add the arugula to a bowl as your base.  Top that with the cooked barley, the chickpeas, walnuts, chopped pears, sundried tomatoes, and the little tomatoes.  Garnish with parsley and coat with the dressing.  Voila! You have a cozy winter salad!
