Orzo w/ Red Beans and Spinach

Where are the beans???

Happy Monday everyone!! This dish is kind of a cross between a warm meal and a salad. There was a sauce you could make with it but I just used my Honey Dijon salad dressing and it was perfect!

So, we need some red beans (which I almost forgot which is why they aren’t in the picture), some baby spinach, garlic, an onion, mushrooms, bell peppers, and orzo.

Start by cooking the bell peppers in a pan. While those are cooking, you can get the water boiling for the orzo and chop up the remaining veggies.

Once the peppers are cooked, add the onions and garlic to the pan and cook those.

Lastly, cook the mushrooms. Technically you could cook the onions, garlic, peppers, and mushrooms together but they cook at different rates and I like to keep the mushrooms separate in case Mr. FBBQ decides he wants some of the meal (he hates mushrooms).

Drain the orzo.

Baby spinach

Add the baby spinach to a bowl. That is the base for this dish.

Add the cooked veggies (bell peppers, onions, garlic, and mushrooms)

Drain and rinse the red beans. You can heat them in a pan if you desire. Add them to your bowl.

I ended up dumping this into a bigger bowl so that I could stir it up a bit. I added my dressing and enjoyed this dish for days!
