Orzo Bowls w/ Kidney Beans & Sauteed Vegetables

Lots of ingredients and lots of cats!

This dish turned out delicious! I even got Mr. FBBQ to try some. Even though I think he only did because he is going to be out of town all week and didn’t have anything else to eat. Plus, I had to keep the mushrooms on the side, as he is not a fan.

To get this dish going we are going to need some baby spinach, kidney beans, mushrooms, onions, bell peppers, some orzo, some dried Italian seasoning, onion powder, cashews, white wine vinegar, and nutritional yeast.

Slice the mushrooms. Cook them in a pan separately if your husband objects to eating them.

Dice the onions and cook them in the same pan when the mushrooms are done.

To make the cashew sauce, soak the cashews in very hot water for about 15 minutes. Drain most of the water and add the nutritional yeast, onion powder, and white wine vinegar. Blend the ingredients together until smooth.

Cook the orzo. That’ll be the base for this dish. Also, cook the peppers in the pan once the onions are done. I actually liked cooking all of the ingredients in the pan separately. Sometimes, when I cook them together, the onions and mushrooms cook faster than the peppers and things end up overcooked. Thanks, Mr. FBBQ!

Looks like rice, is actually pasta!

Add the baby spinach, the peppers, onions, and mushrooms to the orzo. Warm the beans in a pot and add those.

Top with the cashew sauce and enjoy!! We sure did!
