
I’ve got a delicious pasta dish for y’all today! We will need some pasta-I went with whole grain rotini but you could make this recipe with pretty much any type of pasta that suits you. You could even use a zucchini or chickpea pasta. We also need some Brussels sprouts, an onion, garlic, a lemon, chickpeas, sea salt, black pepper, and some thyme. We were gifted these shallots by Mr. FBBQ’s parents so I decided to use those as well! I must say I hit the in-law jackpot. I love my husband’s family. They are amazing and I’m so lucky. They really are my family.

Start steaming the Brussels sprouts. While those are cooking, dice up the onion (and shallots) and the garlic. Cook them in a pan. Add a dash of sea salt and black pepper and some of the thyme. Drain and rinse the chickpeas. Add them to the pan with the onions once the onions are done cooking to warm them up a bit.

Cook the pasta. That will be the base for this dish.

Top the pasta with the chickpea/onion/garlic mix.

Once the Brussels are done cooking cut the ends off and shred them up a bit. Add the Brussels to the dish. Squeeze the lemon on top of the dish. You can add a bit of shaved parmesan if you choose!
