Lemon Blueberry Poppy Seed Muffins

Hello everyone!! Got something different for you today. A baked good-and one without processed sugar or a bunch of additives. Let’s get started!

Muffins-some assembly required

To make these vegan muffins we need whole wheat flour, baking powder, orange juice, a lemon, unsweetened applesauce, poppy seeds, flaxseed, vanilla extract, sea salt, and maple syrup. Maple syrup, flaxseed, and applesauce are commonly used as substitutes in vegan baking.

The Dry Goods

To start, preheat the oven. Line a muffin tin with baking cups or coat it with avocado oil. Mix the dry goods together in one bowl (the flour, baking soda, and sea salt).

Flaxseed and OJ

In a separate bowl, mix the flaxseed and orange juice together. Allow it to sit for about 5 minutes. Then add the maple syrup, vanilla, and the applesauce. Juice the lemon and add the lemon juice to this mixture as well.

Almost done!

Add the wet mixture to the dry and blend it together. Add the blueberries and poppy seeds.

Love the inside of our oven!

Spoon the mixture into the muffin pan and bake for 20 minutes.

Once they cool they will come out of the pan easily! As you can see below, I enjoyed them!!!
