Today, I bring you seven spices!! Yep, seven! And other stuff, of course. This recipe called for red lentil spaghetti. As you may know from reading my previous posts, some of these rare type ingredients tend to be difficult to find. Oddly, we found this one quite easily! At Kroger, nonetheless (for those of you not familiar with Kroger, it’s a Midwest grocery store).
What other ingredients might we need? Garlic. A lot of garlic. Eggplant (my first time cooking eggplant!), bell peppers, red onion, chickpeas, unsweetened plant-based milk, sea salt and black pepper, lemon juice, hummus, and baby spinach.
Let’s start by roasting the garlic. Cut the top ¼ inch off the top of the garlic head so that the cloves are exposed. Save two cloves (or more) for later. Roast the garlic at 400 degrees for about 50 minutes, remove, and let cool.
In a large skillet, cook the peppers, onion, eggplant, and remainder of the garlic in water until softened. Add the chickpeas and grill all of it up.
Boil the pasta until it’s cooked.
For the seven spice part, whisk together allspice, cinnamon, coriander, black pepper, cumin, cloves, and nutmeg. Squeeze the roasted garlic from the papery skin into a bullet blender. Mix in milk, lemon juice, and a dash of salt. Blend it together and you have your sauce!
To serve, smear hummus onto a bowl. Add the spinach, the cooked mixture of peppers, onions, and eggplant. Add the noodles and mix together. You are now ready to eat!! Mr. FBBQ and I were talking about how we need to start rating some of the dishes we cook. I’m thinking based on taste (obviously) and likelihood to make again. I’d love to hear suggestions!
