
Happy Monday y’all!! This post was pretty simple. You will see I bought the family size baby spinach/baby kale. It was cheaper to buy that one than the regular size. Kind of a mistake though. I barely used any of it. Spoiler alert: this dish was not one of my favorites. I ended up only. having it the one night. I used the potatoes and lentils (that I had cooked) for a different dish (see next week’s post).
So, we also need some matchstick carrots. The pre-matchsticked ones were a dollar more so I opted for the baby carrots and I made them into matchsticks myself. Sort of.

Start by cutting up the potatoes and steaming them. Also, cook the lentils.

If you haven’t bought the carrots pre-matchstick you’ll want to cut them up now. The greens are the base for this dish. Top with the cooked potatoes and lentils. Add the carrots. You could put a dressing on this-it might jazz it up a bit. This dish was not my favorite. It wasn’t bad, it just wasn’t anything to get excited over.
