Joint Post: All Bananas! (Pudding, Bread, Muffins)

I told MrsForensicBBQ I need to work on some more side dishes, maybe some desserts to share with y’all. Truth be told, I have never really been a big dessert person. I can pass all day on a cake, pie, ice cream – it just doesn’t move the needle, so to speak. Sure, I can snack on a candy bar (Mr. Goodbar is the best) – the Biscoff ice cream bars have been a recent delicious discovery, but I don’t need any of it.

But I do like me a banana pudding. I was scouring the web for some recipes and they were always so damn simple. I always loved banana bread growing up, so I thought – why not put banana bread in the banana pudding? And here we are.

?‍⬛ Mr. FBBQ claims he’s not a dessert person, yet somehow all my Halloween candy kept disappearing….


No recipe this week. Vanilla pudding per the box – crumble up a loaf of banana bread, slice some bananas and some nilla wafers if you’re crazy.


The Prep Table

Here we go, going bananas.

MrsForensicBBQ unleashed her bible of printed and hand-written recipes and found her mother’s banana bread recipe. Perfect, some nostalgia in this one. She was going to do her own thing and make chocolate chip banana muffins. I thought for a good 4-6 seconds on whether or not I should add chocolate chips to my recipe, and that was it. Hard no.

?‍⬛ He did, however, eat a handful of the chocolate chips. Not a dessert person though….

Can’t give up my favorite spatula

Let’s go! We’re getting a good mash on the banana. I was going to take half of it to loaf out my share, she was going to chocolate up the rest. No, I didn’t break this specific spatula on this recipe, but I can’t give up my love for this utensil.

?‍⬛ I’ve tried to throw it out. It keeps reappearing in the utensil drawer.


The Process

Bread for me, muffins for her

?‍⬛ Flour everywhere. EVERYWHERE. Then, of course, I dropped the flour bin and it opened spilling flour everywhere once again, including on top of the cat. We were cleaning up flour for days.

MrsForensicBBQ prepped the pans and we got to the portioning. You’ll love her strategic placement of the chocolate chips below:

I told her I’d bake hers in the RecTeq like I was going to do mine, but stubborn runs strong in this marriage. She did it her way, I needed to at least use the RecTeq to be ForensicBBQ worthy.

?‍⬛ Stubborn runs strong on both sides. And as for the caption, no chocolate chips for him? That’s a lie. They might not be in his bread, but he definitely got chocolate chips!

As we cooked ’em up, I set up my outdoor chair by the RT-700 Bull and waited until it was time. My thought was that the pudding was going to seriously soften up the bread when I introduce the two. If I cooked (burned) it too much, it wouldn’t be very palatable, so I kept a strong eye on this one.

?‍⬛. These muffins are delicious (and huge) and not at all healthy. Thanks, mom!! I miss you!

?‍⬛ Quick side note, when my mom used to make this recipe she made it as banana bread not muffins and she put chopped up maraschino cherries in it too. My dad continues the tradition by making this for holiday get-togethers.

Cooked it hard to keep a little texture. Let’s see what we ended up with.


The Result

The hardest part is done. Muffins and bread is made (Shout out to my Titan-Ks – I know you’re not an oven glove, but you’re my oven glove). Time to whip up a quick pudding and combine the ingredients.

Time to get with the easy pudding

My technique got better as I compiled the masons jars, but it was pretty simple. It was sliced bananas, chunked banana bread, a couple of those mini Nilla wafers I had from the cream cheese post, and then fill the spaces with the vanilla pudding. Day 1, wasn’t great. As it set, it was legendary.

?‍⬛ That pudding box is a blast from the past! I don’t think I’ve had pudding since then.

Finished up!

You see I made myself a cup to test the product and it was good. My family had just watched my pup as we were away on our camping vacation – so I gave them a good amount of the mason jars. When I had a suffered my broken tooth, I looked to the fridge and had this to get me through. While a crown would eventually adorn my molar, the true crown goes to this mash-up (get it?)

?‍⬛ I heard so much complaining about that crown and the damage that led up to it. He should write an entire post on the ordeal that was his dentist visits.
