While I try not to make “leftovers” a habit for new posts, if I change it up enough – I don’t feel as bad. Head back over and read the Carne Asada post from a few weeks ago. You’ll see why I couldn’t let the leftovers go to waste.


Carne Asada w/ Homemade Tortillas, Guacamole


That flavorful carne

This will be a quick post and is primarily to show you something new. I’ve done a lot of travel to south Texas, and even some of the hotel breakfast spots will have a huevos rancheros bar. I can’t think of a better leftover dish with the carne asada than this. After a strong mid day cook, I woke up refreshed and feeling good from that meal and I remember I have a lot of steak left. Plus those handmade tortillas! All that’s left is to crack a few eggs and dress it up.

Super cost efficient.

I always buy beans/rice for sides and I never really use ’em. I’ll do the tacos, the burritos – whatever. But I don’t do the usual bean/rice side. So I always have something in the pantry ready to go. Today, it’s the microwave pouch o’ beans. Beans aren’t exciting, so I have no problem going boring and easy for this.

We’re going to crisp up these tortillas and then throw a spread of black beans on top. Cook your eggs the way you want, I always like a scramble, so that’s where I’m going. Then just top it with some peppers, salsa, cheese, cilantro. You’ll have a delicious huevos rancheros to start the day. And of course, throw an extra couple of slices of steak on that plate.

You worked hard making the carne asada the prior today, the morning shouldn’t be difficult. High protein start to the day with the beans, eggs, steak – make it as spicy as you want. We’re going to be coming at you hard with some unique originals to continue spring/summer. I have posts through October for you all, can’t wait to share ’em all.
