I ate an unhealthy amount of huevos rancheros when I was in Texas. No doubt I was going to make my own when I was coming back home. No real recipe this week, because it’s a pretty self-explanatory, make-it-your-own kind of meal. And that’s the beauty of it. I’ll show you what I did, how I like it – and you go forth and you do you.
I was still going through my leftover barbacoa. Had a bag thawed out, and that was my protein. If you missed it – find it over here
The Prep Table
My usual go-to is a spicy tomatillo salsa. Nine times out of ten, I’m going with a green sauce and that’s why I went all red today. Helped that I had some salsa to use in the fridge. MrsForensicBBQ and I hate wasting food. We’re going to use up what we can when we can. We’re going to crisp up some tortillas and throw down a black bean base. Top it with a heaping helping of that barbacoa leftover and top it off right.
The Process
Given the option, I’m going to omit the yolks. Yeah yeah, remember what I said? You do you, make it your own. You’d think after a few decades on this earth, I’d warm up to the yolk game at some point – but not yet. I’ll scramble ’em and it’s fine – but that runny yolk, nah. Not my game. Anyway, since we’re going all Blackstone on this one – I’m getting everything prepped then taking it outside.
Beans on the Blackstone isn’t a great social media picture, I know. Better than the Bacon jam I made, sure – but it’s still not a pleasant visual. Not a lot of kitchens are open to the public – it’s all about what it looks like on the plate.
Everything is just adding heat for this one. That barbacoa already had that crazy good flavor cooked into it. The salsa has its own twist. We’re going to freshen it all up with the traditional onion/cilantro and crumble that cotija all over it. Man, I’m getting hungry again typing it up, because I know how good it tasted.
Last point before we put it together – putting that crisp on that flour tortilla made all the difference on this one. Don’t shrug it off and buy those store-bought tostadas.. crisp up a flour tort, and thank me later.
Throw down those refried black beans on a freshly crisped tortilla. Add your favorite protein – next time I make this, I’ll go with a pork/chicken to mix it up, but it’s hard to turn down a barbacoa.
The Result
After plating up them barbacoa/bean tostadas, I dumped those egg whites on the blackstone and threw the result on top. Put a little bit of salsa and then some fresh chopped onion/cilantro. Gave it a little bit of that Melinda’s Mexicana hot sauce and then crumbled the cotija cheese on top. Sliced avocado on the side and hot damn, we’re good.
Great way to start the day. Nice day outside to fire up the Blackstone. Grab a coffee, take the goods outside and enjoy what you got.
