
Hey y’all! So I have posted this recipe before. Which I didn’t realize until I was making it. But that’s ok! Let’s see where we end up the second time around! Let’s get started! We need some pasta, kale (or in this case baby spinach and baby kale), garlic, avocado, lemon, some little tomatoes, and some green vegetables (I opted for asparagus, green beans, and broccoli).
Unfortunately, I didn’t take a lot of photos for this one during the process. So what you don’t see is the following: Cooking the pasta. While that is cooking, add the green vegetables to the vegetable steamer. In a food processor, combine the kale, garlic, lemon juice, and avocado. Blend it into a smooth paste.

The pasta is the base for this dish. Add the green veggies.

Add the tomatoes.

Top with the avocado kale dressing and you are ready to enjoy!! You can top with a little bit of parmesan cheese if you like.
