
Hey y’all! We are in the midst of holiday season and I don’t know about you but I cannot eat like crap on a regular basis and not feel it. SO…I will be throwing some healthy (but still delicious) meals your way for the next few weeks! For this week’s recipe, we need some bell peppers (every color, of course), an avocado, a sweet onion, black beans, kale (or baby kale), cilantro, garlic powder, cumin, and brown rice.

Start by cooking the rice. Brown rice takes a bit of time so be prepared for that. While the rice is cooking you can slice and dice the peppers and onion.

Cook the rice and onions in a pan until they are brown. You will see flecks of black in the above photo. Mr. FBBQ and I are in desperate need of new pans. Ours are a charred disaster. So if anyone is looking for a Christmas gift idea for us…

Add the kale at the last minute to the pan so it wilts.

While the rice is (still) cooking, we can make our seasoning. Super simple. Mix the garlic powder and cumin. You can sprinkle this on the veggies as they cook or later on the dish as you assemble it. You’ll also want to warm the black beans, either by putting them in the pan with the veggies or warming them in a small pot.

The rice is the base for this dish.

Top the rice with the veggie/kale/black bean mix.

Add the sliced avocado and some cilantro. You can squeeze some lime on this dish for some added flavor!
