Brussels Sprouts w/ Pomegranate and Pistachio

This weekend Mr. FBBQ was going to make us pizza. I had planned on it, but the pizza cheese had a little. mold on it so he nixed the idea. Therefore, I went to the grocery and bought other stuff to make. Namely, Brussels Sprouts with Pomegranate and Pistachios (along with sweet potatoes). Mr. FBBQ then decided he was going to make pizza (cutting off the small mold spot on the pizza cheese) but just for himself, not me. Pizza Party for One. This is how I ended up eating healthy (which isn’t necessarily a bad thing) and bringing you another post. That pizza sure did look good though!

Arils

You’ll want to steam the Brussels first. I ended up buying some pretty big ones so they took a bit longer to cook. That seems to be one of my biggest challenges-timing the cooking of things so that it all comes out equally warm in the end.

While the Brussels are cooking, cut open the pomegranate and remove the arils. This is usually a very messy job but this pomegranate wasn’t particularly red or juicy so it wasn’t that bad.

Once the Brussels are done cooking, cut off the ends. Add them to a bowl.

Sweet, salty, and delicious!

Add the pomegranate arils and pistachios. I was going to opt for plain pistachios but I saw these honey roasted ones and had to give it a try. This turned out really good! The arils added sweetness and the pistachios added a nice crunch! Perfect side dish for my sweet potatoes! Still not pizza though…
